It’s Wednesday- Let’s Get Excited!

“Let’s Get Excited” is shamelessly stolen from a CrossFit trainer who yells that before every WOD.

Things are finally calming down for this working girl. Tax updates are released, most rewrites are done, and my editing work is still a ways off. I’ve spent the week working on low-key, relatively stress-free, documentation rewrites for a pretty understanding product lead. Today was pretty exciting because a few of us went out to Chutnee for some amazing Indian buffet food to celebrate my coworker Mark’s birthday. Even though we talked about work a little at lunch, it was so fun to get out of the office and enjoy a delicious meal.

Chutnee is one of the few buffets I’ll eat at, just because the buffet contains maybe 10 Indian dishes, so it doesn’t SEEM like a buffet. Normally when I go to buffets, I just picture people, including myself, overeating and gorging on junk, but I guess an Indian buffet is a little different than somewhere like Golden Corral Trough. Plus, the restaurant wasn’t crowded but the food was really fresh and there was a lot of variety in both vegetarian and meat dishes, along with spicy and not spicy.

I also made cookies and took them to work today- Bob’s Red Mill granola with dried apricots- they have a consistency similar to oatmeal raisin cookies. I’ve never made cookies with dried apricots before, so I was unsure of how they turned out, but they were a hit at work, especially heated up in the microwave for about 10 seconds or so before eating. Or with a glass of milk, whichever you prefer.

As for running, I’m registering for the Miles to Missions 12K that Ebenezer Baptist is hosting to raise money for summer missions, so I’m trying to get some longer runs in. I ran 7.5 miles (about the distance of the 12K) on the treadmill Monday night. It took around 63 minutes, but maybe I can get that time down a minute or so before the race, especially since it’s February 11th. The 12K will be my longest race since my half marathon last year. I’ve never raced a 12K, so instant PR :) .

Along with that, I’m running the Polar Bear 5K next weekend (my company is a sponsor). It’s a trail race, but it will be my first race since Thanksgiving. I’m SO ready to race, and it’s definitely good mental preparation for the 12K. Not to mention only $20 and includes a long-sleeved shirt. Love long sleeved race shirts!

In other news, Clay and I spent some quality time together this weekend. On Saturday night, we went out to dinner- our usual tradition- and on Sunday, we visited Clay’s uncle (He’s doing much better from when we saw him on Christmas and is in a long-term hospital/rehab now) and went grocery shopping.

Clay works nights, goes to school all morning, and sleeps all afternoon, and sometimes I think people who have their spouses around ALL. THE. TIME. take things like buying groceries together for granted. We shopped and hit up the sushi bar at Harris Teeter, then came home to put away our haul- my full fruit basket made me a happy girl.

Oh, and I’m enjoying my new finds at the mall! I think I wore my boots all weekend long except for workouts. They’re super cozy, and while I do tuck my sweats and pajamas into them, I don’t leave the apartment that way :) .

Hope everyone’s having a good week!

A 12K? Wow! That should be fun! I know you’ll do great!

I agree that there are some people who take for granted the fact that their spouses are around all the time to do the normal everyday things. A lot of times you can end up working opposite schedules or maybe your spouse is in the military. It’s good to remember not to take it all for granted.

I love those boots! They look so comfy!

    • Amy Lauren says:

Oh totally! I really feel for military spouses because they get to see even less of theirs than I get to see of Clay, and the spouse is possibly in a dangerous area. It has to cause lots of stress. I seriously hope one day we will both work regular 8-5 (or something like that) jobs.

I love that you called Golden Corral Golden Trough hahaha! Good luck with the 12K and polar bear run :)

  5. oh my gosh, your slippers are TOO cute. i am freezing right now, so i think that’s why i couldn’t help by zero in on them!!

Loving those boots still! Yay for so many races coming up!! Long sleeve race shirts ARE the best. I could live in long sleeve t-shirts. Another reason why I don’t have a fashion blog!

    Have a great weekend!

    • Amy Lauren says:

Yeah, I’m not the most fashionable girl out there either, but I don’t really care much. Clothes are for warmth, LOL. The shirts will be green this year so I’m excited about that, every year they are a little different and that makes the race special.

  7. I usually hate buffets too, but one with Indian food sounds yummy, especially since they usually tend to have plenty of vegetarian options.

Your slippers look so cozy! My feet are always cold in the winter so I’m on the lookout for the perfect slippers.

I bet your coworkers LOVED when you brought those cookies!
